Chanters Ridge is a 'cool climate' boutique vineyard specialising in producing superior quality Pinot Noir, both still and sparkling planted by the family in 1997 on a North facing volcanic slope, altitude 600 meters, we have settling snow yearly.
We use initial open vat fermentation with a mix of whole bunch and pressed grapes. Maturation is in French oak barrels (a mix of new and old) for 15-18 months. Malolatic fermentation occurs prior to bottling. Our original planting was clone D5 V12 and we have planted 114, 115 and 777 since.
Chanters Ridge was chosen as our label name as we are sited on a volcanic ridge of old basalt with red rich volcanic top soil in Chanters Lane.
Our back paddock wines come from a later planting behind the original vineyard. Picking occurs between Anzac Day (28th April) and the first week in May. Pickling and pruning are done by hand. We are aiming to produce wine with varietal characteristics of nose and palate not trying for 'big' wine. We cellar our wines for some years before release to customers purchase a ready to drink Pinot Noir which will still continue to improve for some years.
